This is the ultimate comfort food bread! You get warm, buttery layers stuffed with three kinds of gooey, melted cheese and savory garlic. It is simple to make and perfect for sharing as an appetizer or a dinner side.

Ingredients

Scale
  • 1 loaf (about 1 pound) crusty bread or Italian loaf
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Prepare a baking sheet by lining it with parchment paper.
  2. In a small bowl, combine the softened butter, minced garlic, Italian seasoning, salt, and pepper. Mix until you have a smooth garlic butter spread.
  3. Take your loaf of bread and use a sharp serrated knife to cut deep, even slices across the loaf, going almost all the way to the bottom crust, but do not cut all the way through. Cut perpendicular slices to create a crosshatch or diamond pattern.
  4. Gently open the cuts in the bread. Spread the garlic butter mixture generously into the cuts, making sure to coat the inside surfaces of the bread slices.
  5. In a separate bowl, toss the mozzarella, cheddar, and Monterey Jack cheeses together.
  6. Stuff the shredded cheese mixture deep into the cuts of the bread, distributing it evenly throughout the loaf. Press the loaf back together gently.
  7. Wrap the entire loaf tightly in aluminum foil. Place the foil-wrapped loaf onto the prepared baking sheet.
  8. Bake for 20 minutes while wrapped. This steams the bread slightly and melts the cheese.
  9. Carefully unwrap the foil from the top of the loaf. Return the bread to the oven and bake uncovered for another 5 to 10 minutes, or until the cheese is bubbly and the crust is golden brown.
  10. Remove from the oven, sprinkle with fresh parsley, slice, and serve immediately while warm and gooey.

Notes

  • For extra flavor, you can substitute some of the shredded cheese with Parmesan cheese.
  • If you prefer a crispier top, place the unwrapped loaf under the broiler for 1-2 minutes at the very end, watching closely to prevent burning.
  • This recipe works well with pre-sliced French bread for faster preparation.
