Ingredients

Scale
  • 3 cups cooked sushi rice, seasoned with 1/4 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt
  • 8 ounces imitation crab meat, shredded
  • 8 ounces cooked salmon, flaked (canned or leftover works well)
  • 1/2 cup mayonnaise
  • 1/4 cup cream cheese, softened
  • 2 tablespoons Sriracha (adjust for heat preference)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 cup shredded mozzarella cheese (optional, for topping)
  • 1/4 cup Furikake seasoning
  • 2 tablespoons toasted sesame seeds
  • Optional: Thinly sliced green onions for garnish
  • Optional: Nori sheets for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Prepare the sushi rice: In a small saucepan, combine the rice vinegar, sugar, and salt. Heat gently until the sugar and salt dissolve. Pour this mixture over the warm, cooked sushi rice and mix until fully combined. Spread the seasoned rice evenly into the bottom of the prepared baking dish.
  3. Make the creamy topping: In a medium bowl, combine the shredded imitation crab, flaked salmon, mayonnaise, softened cream cheese, Sriracha, soy sauce, and sesame oil. Mix everything until it forms a uniform, creamy mixture.
  4. Spread the creamy seafood mixture evenly over the layer of sushi rice in the baking dish.
  5. If using, sprinkle the mozzarella cheese evenly over the topping layer.
  6. Bake for 15 to 20 minutes, or until the topping is hot and bubbly around the edges.
  7. Remove the dish from the oven. Sprinkle generously with Furikake seasoning and toasted sesame seeds. If you want a slightly crispier top, you can briefly broil for 1-2 minutes, watching closely to prevent burning.
  8. Let the sushi bake rest for 5 minutes before serving. Scoop portions onto plates and serve immediately with nori sheets for wrapping, if desired.

Notes

  • For a richer flavor, you can substitute imitation crab with real crab meat or use cooked shrimp mixed in with the crab.
  • If you prefer a spicier kick, increase the Sriracha or add a dash of chili oil to the creamy mixture.
  • This dish is excellent for parties; you can assemble the entire casserole ahead of time and bake it just before serving.
