Make easy, high-protein egg bites at home using a muffin tin. This recipe mimics the texture of popular cafe-style egg bites and is perfect for meal prepping.

  • 1 cup cottage cheese (full fat or low fat)
  • 6 large eggs
  • 1/2 cup shredded cheese (Monterey Jack or Gruyere recommended)
  • 1/4 cup cooked, crumbled bacon (optional)
  • 1/4 cup chopped spinach (optional)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin or line it with silicone liners.
  2. Combine the cottage cheese and eggs in a blender. Blend until the mixture is completely smooth and creamy, about 30 seconds. This step creates the fluffy texture.
  3. Pour the blended egg mixture into a medium bowl. Gently stir in the shredded cheese, bacon, spinach, salt, and pepper. Do not overmix.
  4. Divide the mixture evenly among the 12 muffin cups, filling each about three-quarters full.
  5. Place the muffin tin into a larger baking pan. Carefully pour hot water into the larger pan until the water reaches halfway up the sides of the muffin cups. This water bath helps the bites cook evenly and stay moist.
  6. Bake for 25 to 30 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  7. Carefully remove the muffin tin from the water bath. Let the egg bites cool in the tin for 5 minutes before removing them.

Notes

  • For the smoothest texture, use a high-speed blender for the cottage cheese and egg base.
  • If you skip the water bath, the edges may become dry or rubbery.
  • Store cooled egg bites in an airtight container in the refrigerator for up to 4 days or freeze them for up to 2 months. Reheat in the microwave for 30 to 60 seconds.
