Make tender beef and vegetables in a slow cooker with minimal preparation. This recipe creates a hearty, rich stew perfect for a simple dinner.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 carrots, peeled and cut into 1-inch pieces
  • 3 celery stalks, cut into 1-inch pieces
  • 1 pound small potatoes, quartered
  • 4 cups beef broth
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour (for thickening)
  • 1/4 cup cold water (for slurry)

Instructions

  1. Place the cubed beef, onion, carrots, celery, and potatoes into the crockpot.
  2. In a separate bowl, whisk together the beef broth, cream of mushroom soup, Worcestershire sauce, thyme, salt, and pepper.
  3. Pour the liquid mixture over the beef and vegetables in the crockpot. Stir gently to combine.
  4. Cover the crockpot and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beef is very tender.
  5. About 30 minutes before serving, mix the flour and cold water in a small bowl to create a slurry. Stir this slurry into the stew.
  6. Cover and cook on high for the remaining 30 minutes, or until the stew has thickened to your liking.
  7. Serve hot.

Notes

  • For a richer flavor, brown the beef cubes in a skillet before adding them to the slow cooker.
  • If you prefer a thicker gravy, increase the flour and water slurry amount slightly.
  • Add 1 cup of frozen peas during the last 30 minutes of cooking for added color and texture.
