4 medium baking apples (like Granny Smith or Honeycrisp)
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup (1 stick) unsalted butter, cut into pieces
1 cup packed light brown sugar
1/2 cup water
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
Peel, core, and cut each apple into quarters.
In a small bowl, mix together the granulated sugar, cinnamon, and nutmeg. Toss the apple quarters in this mixture until they are evenly coated.
Unroll the crescent roll dough onto a clean surface. Do not separate the triangles. Gently stretch each rectangle slightly.
Place one seasoned apple quarter near the wide end of a dough section. Roll the dough up around the apple, tucking in the sides as you roll to seal the apple inside the pastry.
Place the wrapped dumpling, seam-side down, into the prepared baking dish. Repeat with the remaining apples and dough.
In a small saucepan, combine the butter, brown sugar, and water. Heat over medium heat, stirring until the butter is melted and the sugar is dissolved. Bring the mixture to a gentle boil, then remove from heat and stir in the vanilla extract. This is your brown sugar glaze.
Pour the warm brown sugar glaze evenly over the apple dumplings in the baking dish.
Bake for 30 to 35 minutes, or until the pastry is golden brown and the sauce is bubbly.

Notes
For a classic Pennsylvania Dutch touch, use a whole peeled apple instead of quarters, adjusting the dough wrapping as needed.
