1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 lb fresh green beans, trimmed
1 tablespoon olive oil
3 cloves garlic, minced
1/4 cup low-sodium soy sauce
1/4 cup honey
2 tablespoons apple cider vinegar
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions
Season the cut chicken pieces generously with salt and pepper.
Heat the olive oil in a large skillet or pan over medium-high heat. Add the chicken and cook until browned on all sides and nearly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the trimmed green beans to the same skillet. Cook, stirring occasionally, for 4-6 minutes until they are crisp-tender.
Add the minced garlic and ginger to the skillet with the green beans. Cook for 1 minute until fragrant.
