  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed cornflakes (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the thawed hash brown potatoes, cream of chicken soup, sour cream, 1 cup of cheddar cheese, 1/2 cup melted butter, milk, salt, and pepper. Mix gently until everything is just combined. Do not overmix the potatoes.
  3. Spread the potato mixture evenly into the prepared baking dish.
  4. Sprinkle the remaining cheddar cheese over the top of the casserole.
  5. In a small bowl, mix the crushed cornflakes with the 2 tablespoons of melted butter. Sprinkle this mixture evenly over the cheese layer.
