1 lb cooked, shredded chicken
1/2 cup buffalo wing sauce
2 tbsp unsalted butter, melted
1 cup cooked white rice or quinoa
1/2 cup shredded lettuce
1/4 cup blue cheese crumbles
2 tbsp ranch dressing or blue cheese dressing
1/4 cup diced celery
1/2 avocado, sliced
Instructions
In a medium bowl, combine the shredded chicken, buffalo wing sauce, and melted butter. Mix until the chicken is fully coated.
Warm the chicken mixture slightly if desired, about 1 minute in the microwave.
Divide the cooked rice or quinoa between two serving bowls.
Top the base with the shredded lettuce.
Spoon the buffalo chicken mixture over the lettuce layer in each bowl.
Add the celery, sliced avocado, and blue cheese crumbles to each bowl.
Drizzle the ranch or blue cheese dressing over the toppings. Serve immediately.
Notes
For meal prepping, store the cooked chicken, base (rice/quinoa), and toppings separately. Assemble just before eating.
To make this low carb, substitute the rice or quinoa with cauliflower rice or extra shredded lettuce.
If you prefer a milder spice level, reduce the amount of buffalo sauce or add a teaspoon of honey to the sauce mixture.
