2 pounds beef chuck, cut into 1-inch cubes
2 tablespoons olive oil
1 large onion, chopped
2 carrots, peeled and sliced
2 celery stalks, chopped
4 cloves garlic, minced
8 cups low-sodium beef broth
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/4 cup all-purpose flour
1 pound wide egg noodles
Salt and black pepper to taste
Instructions
Season the beef cubes generously with salt and pepper.
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, making sure not to overcrowd the pot. Remove the browned beef and set it aside.
Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
Slowly whisk in the beef broth, scraping up any browned bits from the bottom of the pot.
Return the beef to the pot. Stir in the Worcestershire sauce, thyme, and rosemary.
Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 1 hour and 15 minutes, or until the beef is very tender.
Increase the heat to medium and bring the soup back to a gentle boil. Add the egg noodles and cook according to package directions, usually 6 to 8 minutes, until they are al dente.
Taste the soup and adjust salt and pepper as needed before serving hot.
Notes
For an even richer broth, use high-quality beef stock instead of standard broth.
If you prefer thicker noodles that do not absorb too much liquid, add them during the last 5 minutes of cooking.
This soup tastes even better the next day, making it excellent for family meal prep.
