This is the easy, dump-and-go Crockpot Teriyaki Chicken recipe you need for busy weeknights. It uses only five ingredients to create tender, flavorful chicken with a rich sauce, making it perfect for family dinners and meal prep.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup quality teriyaki sauce
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/4 cup brown sugar, packed
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon cornstarch (for thickening)
  • 2 tablespoons cold water (for slurry)

Instructions

  1. Place the chicken breasts or thighs into the basin of your slow cooker.
  2. Pour the teriyaki sauce and soy sauce over the chicken.
  3. Sprinkle the brown sugar and add the grated fresh ginger over the top.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce in the slow cooker.
  6. In a small bowl, whisk together the cornstarch and cold water until smooth to create a slurry. Stir this slurry into the sauce in the slow cooker.
  7. Set the slow cooker to HIGH (if it was on LOW) and cook uncovered for 10 to 15 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
