Make this filling and budget-friendly Cowboy Soup in your slow cooker. This recipe uses ground beef, beans, corn, and tomatoes for a simple, set-it-and-forget-it weeknight dinner.

Ingredients

  • 1.5 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10 oz) can Ro-Tel diced tomatoes and green chilies, undrained
  • 4 cups beef broth
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  2. Place the browned ground beef, chopped onion, and minced garlic into the basin of your slow cooker.
  3. Add the kidney beans, black beans, corn, diced tomatoes, Ro-Tel, beef broth, ranch seasoning mix, chili powder, and cumin to the slow cooker. Stir everything together well.
  4. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  5. Taste the soup before serving and add salt and pepper as needed.
  6. Serve hot with your preferred toppings.

Notes

  • For a thicker soup, remove about 1 cup of the soup mixture near the end of cooking, mash it slightly, and stir it back into the slow cooker.
  • Serve this soup with shredded cheddar cheese, a dollop of sour cream, and cornbread on the side.
  • You can substitute ground turkey or sausage for the ground beef if desired.
