  • 1 pound boneless, skinless chicken thighs
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. Place chicken breasts and thighs in your slow cooker.
  2. Add chopped onion, carrots, and celery around the chicken.
  3. Pour in chicken broth.
  4. Season with salt, pepper, thyme, and rosemary.
  5. Stir in condensed cream of chicken soup and milk.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
  7. Remove chicken from the slow cooker and shred it. Return the shredded chicken to the slow cooker.
  8. In a separate bowl, whisk together flour, baking powder, and salt for the dumplings.
  9. Stir in milk and melted butter until just combined. Do not overmix.
  10. Drop spoonfuls of the dumpling batter over the chicken and vegetable mixture in the slow cooker.
  11. Cover and cook on high for an additional 20-30 minutes, or until dumplings are cooked through and fluffy.
  12. Serve hot and enjoy your delicious meal!
