2 medium zucchinis, cut into 1/2-inch thick sticks
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten

Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
Dip each zucchini stick into the beaten eggs, letting any excess drip off.
Roll the egg-coated zucchini sticks in the breadcrumb mixture, ensuring they are evenly coated.
Place the coated zucchini sticks in a single layer on the prepared baking sheet.
Drizzle with olive oil.
Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with your favorite dipping sauce.
Notes
For extra crispiness, you can bake them for a few extra minutes.
