1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1 large egg, lightly beaten
1/4 cup vegetable oil, plus more for frying
Instructions
In a large bowl, whisk together the cornmeal, flour, sugar, salt, baking powder, and baking soda.
In a separate bowl, whisk the buttermilk and egg together.
Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few lumps are fine.
Stir in the 1/4 cup of vegetable oil.
Heat about 1/2 inch of vegetable oil in a large cast-iron skillet over medium-high heat until the oil shimmers (about 350°F).
Carefully drop the batter by 1/4 cup measures into the hot oil, flattening slightly with the back of the spoon to form patties. Do not crowd the pan.
Fry for 2 to 3 minutes per side, until the patties are deep golden brown and crispy.
Remove the fried cornbread with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Serve hot, perhaps with honey butter or alongside chili or greens.
Notes
For extra crispy edges, make sure your oil is hot enough before adding the batter.
You can use leftover batter to make small cornmeal fritters by dropping smaller spoonfuls into the hot oil.
This recipe makes patties similar to hoecakes in shape and size.
