  • 1 lb boneless, skinless chicken breasts, cut into 1-inch strips
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil spray
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup thinly sliced red onion
  • For the Sauce:
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon cornstarch mixed with 1 teaspoon cold water (slurry)

Instructions

  1. Prepare the chicken coating: In one shallow dish, mix the flour, salt, pepper, paprika, and garlic powder. In a second dish, place the beaten eggs. In a third dish, place the panko breadcrumbs.
  2. Dredge each chicken strip first in the flour mixture, shaking off excess. Dip into the egg, letting excess drip off. Finally, press firmly into the panko breadcrumbs to coat completely.
  3. Preheat your air fryer to 400°F (200°C). Lightly spray the breaded chicken pieces with olive oil spray.
  4. Air fry the chicken in a single layer (work in batches if necessary) for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature of 165°F).
  5. While the chicken cooks, make the sauce: Combine honey, soy sauce, rice vinegar, minced garlic, and ginger in a small saucepan. Bring to a simmer over medium heat.
  6. Whisk in the cornstarch slurry and cook for 1 minute, stirring constantly, until the sauce thickens slightly into a glaze. Remove from heat.
  7. Place the cooked crispy chicken pieces in a bowl and toss gently to coat them thoroughly with the sticky honey garlic glaze.
  8. Warm the tortillas briefly in a dry skillet or microwave until pliable.
  9. Assemble the wraps: Lay a tortilla flat. Layer with lettuce, a portion of the glazed crispy chicken, and a few slices of red onion.
  10. Roll the tortilla tightly to form a wrap. Serve immediately.

Notes

  • For extra crispiness, you can briefly bake the coated chicken at 425°F for 5 minutes before air frying.
  • If you do not have an air fryer, you can bake the chicken at 425°F for 18-20 minutes, flipping halfway.
  • Use thicker tortillas to prevent tearing when rolling the wraps.
