2 boneless, skinless chicken breasts (about 6 oz each)
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon garlic powder
1 large egg
1/2 cup buttermilk
Vegetable oil, for frying
4 brioche buns
Butter, for toasting buns
4 slices dill pickle chips
1/2 cup mayonnaise (optional)
Instructions
Cut the chicken breasts in half horizontally to create four thinner cutlets. Pound them slightly to an even thickness.
In a shallow dish, whisk together the flour, cornstarch, salt, pepper, paprika, and garlic powder.
In a separate bowl, whisk the egg and buttermilk together.
Dip each chicken cutlet first into the wet mixture, letting excess drip off, then press firmly into the dry flour mixture, ensuring full coverage.
Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
Carefully place the breaded chicken into the hot oil, ensuring not to overcrowd the pan. Fry for 4 to 6 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
Remove chicken and place on a wire rack set over a baking sheet to drain excess oil.
While the chicken drains, prepare the Spicy Honey Sauce: Mix 1/4 cup honey, 2 tablespoons hot sauce (like Sriracha or your preferred chili sauce), and 1 teaspoon apple cider vinegar in a small bowl.
Brush the hot fried chicken generously on both sides with the Spicy Honey Sauce.
Lightly butter the cut sides of the brioche buns and toast them in a clean skillet over medium heat until golden brown.
To assemble, spread mayonnaise on the bottom bun (if using), top with pickles, place the sauced crispy chicken cutlet, and top with the other bun half.
Notes
For extra crispiness, dip the chicken in the wet mixture, then the dry mixture, then back into the wet mixture, and finally back into the dry mixture for a double coating.
Use chicken thighs instead of breasts for a richer flavor, adjusting frying time slightly.
To prevent sogginess, lightly toast the inside of the bun and apply a thin layer of fat (like mayonnaise) barrier before adding wet toppings or the chicken.
