  • 1 (10 ounce) can cream of chicken soup
  • 4 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup water (if needed for thinning)
  • 2 cups fresh spinach (optional)

Instructions

  1. Season the chicken pieces lightly with salt and pepper. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  2. Add the crumbled bacon to the skillet and cook briefly until crisp. Remove the bacon and set it aside with the chicken.
  3. Add the gnocchi and chicken broth to the same skillet. Bring the mixture to a simmer, stirring occasionally, until the gnocchi begins to soften, about 3 to 5 minutes.
