  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 ounce) can diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 1 cup half-and-half or heavy cream
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in diced green chilies, cumin, chili powder, oregano, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  5. Pour in chicken broth and bring to a simmer.
  6. Return the browned chicken to the pot. Add cannellini beans and great northern beans.
  7. Reduce heat to low, cover, and simmer for at least 20 minutes, or until chicken is cooked through and flavors have melded.
  8. Stir in half-and-half or heavy cream and shredded Monterey Jack cheese until cheese is melted and the chili is creamy.
  9. Season with salt and pepper to taste.
  10. Serve hot, with your favorite toppings.

Notes

  • For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
  • If you don’t have cannellini beans, kidney beans or pinto beans can be used as a substitute.
  • This chili can be made ahead of time and reheated. The flavors will even deepen overnight.
  • For a thicker chili, you can mash some of the beans against the side of the pot before adding the cream.
