A simple recipe for a comforting, one-pot soup featuring cheese tortellini in a rich, creamy tomato broth.

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste
  • 2 cups fresh spinach (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the crushed tomatoes, vegetable broth, dried basil, dried oregano, and red pepper flakes if you are using them. Stir to combine.
  4. Bring the mixture to a simmer. Reduce the heat to medium-low, cover, and cook for 10 minutes to allow the flavors to meld.
  5. Add the refrigerated tortellini to the simmering soup. Cook according to package directions, usually about 3 to 5 minutes, until the tortellini float and are cooked through.
  6. Reduce the heat to low. Stir in the heavy cream and the grated Parmesan cheese until the cheese melts and the soup is creamy. Do not let the soup boil after adding the cream.
  7. If using spinach, stir it in now and cook just until wilted, about 1 minute.
  8. Taste the soup and season with salt and black pepper as needed.
  9. Serve hot, garnished with extra Parmesan cheese.

Notes

  • For a richer flavor, use chicken broth instead of vegetable broth.
  • To make this soup vegetarian, confirm your tortellini filling is meat-free.
  • If you want a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir this slurry into the simmering soup before adding the cream.
  • Add cooked, shredded chicken during the last 5 minutes of cooking for a heartier meal.
