Ingredients
Scale
2 slices artisan bread
1/2 cup whole-milk ricotta cheese
1 large egg
1 teaspoon olive oil
Pinch of salt
Pinch of black pepper
Optional: Chili flakes or fresh herbs for topping
Instructions
Toast your bread slices until golden brown. You can use a toaster or lightly toast them under the broiler.
While the bread toasts, prepare your egg. Heat the olive oil in a small non-stick skillet over medium-low heat.
Crack the egg into the skillet. Cook the egg to your preference; a runny yolk works well for creaminess. Season with salt and pepper.
Remove the toast from the toaster. Spread an even layer of ricotta cheese over each slice of warm toast.
Carefully place one cooked egg on top of the ricotta on each slice.
Season the egg with a little more salt and pepper. Add chili flakes or herbs if you are using them.
Serve immediately for a delicious, protein-packed breakfast.
Notes
Use sourdough or thick-cut bread for the best texture to support the toppings.
For a richer flavor, gently warm the ricotta cheese for a minute before spreading it on the toast.
This recipe is a great base; try adding a drizzle of honey or a sprinkle of everything bagel seasoning.
