Make this simple and comforting potato leek soup. This recipe yields a velvety texture and is perfect for a weeknight dinner.

  • 2 tablespoons unsalted butter
  • 4 large leeks, white and light green parts only, cleaned and sliced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 large potatoes (about 1.5 lbs), peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • Fresh chives, chopped, for garnish

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the sliced leeks and cook gently until soft, about 8 to 10 minutes. Do not brown them.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the vegetable broth, add the diced potatoes, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are very tender, about 15 to 20 minutes.
  6. Remove the pot from the heat. Use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a standard blender and blend until smooth, then return it to the pot.
  7. Stir in the heavy cream (or coconut milk). Heat gently for 2 minutes; do not boil after adding the cream.
  8. Taste and adjust seasoning if needed.
  9. Serve hot, garnished with fresh chopped chives.

Notes

  • To clean leeks thoroughly, slice them first, then soak them in a bowl of cold water, agitating them to remove trapped dirt. Lift them out of the water, leaving the grit behind.
  • For a richer flavor, substitute half the broth with dry white wine and let it cook down before adding the remaining broth.
  • If you prefer a rustic texture, only partially blend the soup.
