Make a satisfying, creamy pesto gnocchi dinner in one pan. This recipe combines store-bought gnocchi with a simple cream sauce, pesto, sun-dried tomatoes, and fresh spinach for a quick weeknight meal.

  • 1 (16 ounce) package potato gnocchi
  • 1 tablespoon olive oil
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup prepared basil pesto
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped sun-dried tomatoes and cook for 2 minutes until fragrant.
  2. Add the minced garlic to the skillet and cook for 30 seconds until aromatic. Do not let the garlic burn.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Cook for 1 minute, scraping up any browned bits from the bottom of the pan.
  4. Reduce the heat to low. Stir in the heavy cream and basil pesto until the sauce is combined.
  5. Add the uncooked gnocchi directly to the skillet. Stir gently to coat the gnocchi in the sauce.
  6. Cover the skillet and let it simmer gently for 5 to 7 minutes, or until the gnocchi are tender and have absorbed some liquid. Stir occasionally to prevent sticking.
  7. Remove the skillet from the heat. Stir in the Parmesan cheese until the sauce thickens slightly and becomes creamy.
  8. Add the fresh spinach and stir until it wilts into the sauce, about 1 minute.
  9. Season with salt and pepper to your preference. Serve immediately with extra Parmesan cheese on top.

Notes

  • If you prefer a thinner sauce, add a splash more vegetable broth or cream while stirring in the cheese.
  • Use high-quality pesto for the best flavor in this simple sauce.
  • You can substitute fresh basil leaves for the spinach if desired.
