  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 ounces cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach

Instructions

  1. Season the chicken breasts on both sides with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken breasts and cook for 5 to 7 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside on a plate.
  4. Add the sliced mushrooms to the same skillet. Cook for 5 minutes, stirring occasionally, until they release their moisture and brown slightly.
  5. Add the minced garlic and Italian seasoning to the mushrooms. Cook for 1 minute until fragrant.
  6. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer and reduce slightly for 2 minutes.
  7. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth. Let the sauce heat through but do not boil.
  8. Add the fresh spinach to the sauce. Stir gently until the spinach wilts completely, about 1 to 2 minutes.
  9. Return the cooked chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the chicken.
  10. Serve immediately directly from the skillet.

Notes

  • For a thicker sauce, let the broth reduce longer before adding the cream.
  • If you prefer to use chicken thighs, adjust the cooking time as needed until they reach 165°F internally.
  • Use fresh spinach for the best texture; frozen spinach will add too much water to the sauce.
