1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
8 ounces pasta (fettuccine or penne recommended)
1 tablespoon olive oil
1 tablespoon butter
8 ounces cremini mushrooms, sliced
3 cloves garlic, minced
1/2 cup dry white wine or chicken broth
1 1/2 cups heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese, plus more for serving
1/4 cup fresh parsley, chopped

Instructions
Cook pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining. Set aside.
Season the chicken pieces generously with salt and pepper.
Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
Add the sliced mushrooms to the same skillet. Cook until they release their moisture and start to brown, about 5 minutes.
Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.
Pour in the white wine or chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Let it reduce slightly, about 2 minutes.
Reduce heat to medium. Stir in the heavy cream and 1 cup of chicken broth. Bring the sauce to a gentle simmer.
Stir in the grated Parmesan cheese until the sauce is smooth and thickened. Season with salt and pepper.
Return the cooked chicken to the skillet. Add the drained pasta. Toss everything together to coat well.
If the sauce seems too thick, add reserved pasta water, one splash at a time, until you reach your desired consistency.
Stir in the fresh parsley. Serve immediately with extra Parmesan cheese on top.
Notes
For a richer flavor, use fresh thyme along with the garlic.
You can substitute heavy cream with half-and-half for a slightly lighter sauce, but it may not thicken as much.
If you do not use wine, substitute with an equal amount of chicken broth.
