1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup orzo pasta
2 cups chicken or vegetable broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
2 cups fresh spinach, packed
1/4 teaspoon black pepper
Salt to taste
Instructions
Heat the olive oil and butter in a large skillet or pot over medium heat.
Add the minced garlic and cook for 1 minute until fragrant; do not let it brown.
Add the orzo pasta to the skillet and toast for 2 minutes, stirring constantly.
Pour in the broth. Bring the mixture to a simmer, then reduce the heat to medium-low. Cook, stirring occasionally, for about 10 to 12 minutes, or until the orzo is tender and most of the liquid is absorbed.
Stir in the heavy cream and grated Parmesan cheese. Cook for 1 minute until the sauce thickens slightly.
Add the fresh spinach. Stir until the spinach wilts completely into the sauce, about 1 to 2 minutes.
Season with black pepper and salt to taste.
Serve immediately, topped with extra Parmesan cheese.
Notes
For a richer sauce, substitute half of the broth with whole milk.
