One-Pot Creamy Crack Chicken Gnocchi

Make this rich, flavorful, and easy one-pot gnocchi dinner featuring chicken, bacon, and a creamy ranch sauce. It cooks quickly for a perfect weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 slices bacon, chopped
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can chicken broth
  • 1 (16 ounce) package potato gnocchi
  • 1 (1 ounce) packet dry ranch seasoning mix
  • 8 ounces cream cheese, cut into cubes
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chopped bacon and cook until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pot.
  2. Add the chicken pieces to the pot and cook until browned on all sides, about 5 minutes. Remove the chicken and set it aside with the bacon.
  3. Add the diced onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pot.
  5. Stir in the dry ranch seasoning mix until dissolved. Add the uncooked gnocchi to the pot.
  6. Return the cooked chicken to the pot. Cover the pot and cook according to the gnocchi package directions, usually about 5-7 minutes, stirring occasionally.
  7. Reduce the heat to low. Stir in the cream cheese cubes until they melt and the sauce becomes smooth.
  8. Stir in the heavy cream, mozzarella cheese, and Parmesan cheese until everything is melted and creamy. Heat through gently, but do not boil.
  9. Taste and season with salt and pepper as needed.
  10. Serve immediately, topped with the reserved crispy bacon pieces.

Notes

  • For a thicker sauce, allow the mixture to simmer uncovered for an extra few minutes after adding the cream.
  • You can substitute pre-cooked rotisserie chicken for the raw chicken to save about 10 minutes of cooking time.
  • Use frozen gnocchi if preferred; adjust cooking time slightly if necessary.
