Make this rich, velvety chicken tortellini soup in one pot for a quick and comforting weeknight dinner.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and cook until browned on all sides, about 5 minutes. Remove chicken and set aside.
  2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Pour in the chicken broth, diced tomatoes (with juice), Italian seasoning, garlic powder, pepper, and salt. Bring the mixture to a boil.
  4. Reduce heat to low, return the cooked chicken to the pot, and simmer for 10 minutes, or until the chicken is cooked through.
  5. Add the refrigerated tortellini to the soup. Cook according to package directions, usually about 3 to 5 minutes, until the pasta floats.
  6. Stir in the heavy cream and Parmesan cheese until the cheese melts and the soup becomes creamy.
  7. If using, stir in the fresh spinach until it wilts.
  8. Serve the soup hot.

Notes

  • For a Tuscan variation, stir in 1 teaspoon of dried basil and a pinch of red pepper flakes with the other seasonings.
  • If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir this slurry into the simmering broth before adding the cream.
  • Stir in extra grated Parmesan cheese just before serving for added flavor.
