2 tablespoons olive oil
1 medium yellow onion, chopped
2 carrots, peeled and sliced
2 celery stalks, sliced
2 cloves garlic, minced
1/2 cup all-purpose flour
6 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 pound boneless, skinless chicken breasts or thighs, cooked and shredded
1 (16 ounce) package potato gnocchi (shelf-stable or frozen)
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt to taste
Fresh parsley, chopped, for garnish
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
Add the minced garlic and cook for 1 minute more until fragrant.
Whisk in the flour until it forms a paste with the vegetables and oil. Cook for 1 minute, stirring constantly.
Slowly whisk in the chicken broth until smooth. Add the Italian seasoning, thyme, and pepper. Bring the mixture to a simmer.
Reduce the heat to low, cover, and let it simmer for 10 minutes, allowing the vegetables to become tender.
Stir in the shredded cooked chicken and the gnocchi. Cook according to the gnocchi package directions, usually about 3 to 5 minutes, until the gnocchi float.
Reduce the heat to the lowest setting. Stir in the heavy cream and Parmesan cheese until the cheese melts and the soup is heated through. Do not boil after adding the cream.
Taste the soup and add salt as needed.
Serve hot, garnished with fresh parsley.
Notes
You can use rotisserie chicken to save time when preparing the shredded chicken.
If you use frozen gnocchi, you may need to increase the simmering time slightly after adding them.
For a thicker soup, let it simmer uncovered for a few extra minutes before adding the cream, or mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering broth before adding the chicken and gnocchi.
