Make this easy, one-pan Creamy Cajun Chicken Skillet for a quick weeknight dinner featuring tender chicken in a rich, spicy cream sauce.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning (or to taste)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and Cajun seasoning; cook for 1 minute until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  5. Reduce the heat to medium-low. Stir in the heavy cream and bring the mixture to a gentle simmer. Do not boil rapidly.
  6. Stir in the Parmesan cheese until the sauce is smooth and slightly thickened. Taste and adjust seasoning if needed.
  7. Return the cooked chicken to the skillet. Stir to coat the chicken completely in the cream sauce.
  8. Simmer for 2-3 minutes until the chicken is heated through.
  9. Garnish with fresh parsley before serving.

Notes

  • For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water, then stir this slurry into the simmering sauce before adding the cheese.
  • Adjust the amount of Cajun seasoning to control the spice level of your cream sauce.
  • Serve this skillet meal over rice, pasta, or with crusty bread.
