Make this simple, one-pan Creamy Cajun Chicken and Rice Skillet for a flavorful weeknight dinner.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 tablespoons Cajun seasoning (adjust to your spice preference)
  • 3 cups chicken broth
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup heavy cream
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Season the chicken pieces with half of the Cajun seasoning.
  2. Heat the olive oil in a large, deep skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the uncooked rice and the remaining Cajun seasoning. Cook, stirring constantly, for 1 minute.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Bring the mixture to a boil.
  6. Reduce the heat to low, cover the skillet, and simmer for 15 minutes, or until the rice is mostly tender.
  7. Stir in the cream of mushroom soup, heavy cream, and the cooked chicken. Stir well to combine.
  8. Cover and cook for another 5 minutes, or until the chicken is cooked through and the sauce has thickened.
  9. Stir in the frozen peas during the last 2 minutes of cooking.
  10. Remove from heat. Let stand for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • For a spicier dish, add 1/4 teaspoon of cayenne pepper with the Cajun seasoning.
  • If you prefer a thicker sauce, uncover the skillet during the last 5 minutes of cooking to allow some liquid to evaporate.
  • You can substitute cream of chicken soup for cream of mushroom soup if desired.
