Creamy Butternut Squash Soup

This creamy butternut squash soup is a perfect fall comfort food. It’s easy to make and will bring warmth to your table.

Ingredients

  • 2 pounds butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Add cubed butternut squash and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until squash is tender.
  4. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  5. Return the soup to the pot. Stir in milk, salt, pepper, and nutmeg.
  6. Heat gently over low heat until warmed through. Do not boil.
  7. Serve hot.

Notes

  • For a richer soup, use heavy cream instead of milk.
  • Add a pinch of cayenne pepper for a little heat.
  • Garnish with toasted pumpkin seeds or a swirl of cream.
