1.5 cups lukewarm water
1 teaspoon active dry yeast
1 tablespoon honey or sugar
3.5 cups bread flour or all-purpose flour
1.5 teaspoons salt
1 cup dried cranberries
1 cup chopped walnuts
1 teaspoon orange zest
Instructions
In a large bowl, mix the lukewarm water, yeast, and honey. Let stand for 5 minutes until foamy.
Add the flour and salt to the yeast mixture. Stir with a wooden spoon until just combined into a shaggy dough. Do not overmix.
Fold in the dried cranberries, chopped walnuts, and orange zest until evenly distributed.
Cover the bowl tightly with plastic wrap and let the dough rise in a warm place for 12 to 18 hours. The dough will become bubbly and increase in volume.
Lightly flour a work surface. Gently scrape the dough out and fold it over itself a few times to form a rough ball.
Place the dough ball on a sheet of parchment paper. Cover loosely with a clean kitchen towel and let it rest for 30 minutes.
About 20 minutes before the rest period ends, place a Dutch oven (with the lid on) into your oven and preheat to 450°F (232°C).
Carefully remove the hot Dutch oven from the oven. Lift the dough using the parchment paper and gently lower it into the hot pot.
Cover the Dutch oven with the lid and bake for 30 minutes.
Remove the lid and continue baking for another 10 to 15 minutes, until the crust is deep golden brown.
Carefully remove the bread from the Dutch oven and let it cool completely on a wire rack before slicing.
Notes
For a Costco-style loaf, you can add 1/4 cup of raisins along with the cranberries.
Toast the walnuts lightly before adding them to the dough for deeper flavor.
This bread is excellent served warm with butter or orange marmalade.
