  2. In a food processor or blender, combine the cottage cheese and egg yolks. Blend until the mixture is completely smooth and creamy. This step is important for a non-gritty texture.
  3. In a separate, clean bowl, beat the egg whites with the cream of tartar (if using) until stiff peaks form. You want the whites to hold their shape firmly.
  4. Gently fold one-third of the stiff egg whites into the cottage cheese mixture to lighten it.
  5. Carefully fold in the remaining egg whites until just combined. Do not overmix; you want to keep the air in the mixture.
  6. Spoon six equal mounds of the batter onto the prepared baking sheet. Gently shape them into rounds, resembling thick pancakes.
  7. Bake for 25 to 30 minutes, or until the tops are lightly golden brown and the bread feels firm to the touch.
