1 pound flank steak, thinly sliced against the grain
1/4 cup cornstarch
1/4 cup soy sauce
2 tablespoons oyster sauce
2 tablespoons brown sugar
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1/4 cup vegetable oil, divided
2 green onions, sliced
Instructions
In a bowl, toss the sliced flank steak with cornstarch until evenly coated.
In a separate small bowl, whisk together soy sauce, oyster sauce, brown sugar, rice vinegar, and sesame oil.
Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat.
Add the coated steak in a single layer and cook until browned on both sides, about 2-3 minutes per side. Remove steak from the skillet and set aside.
Add the remaining 2 tablespoons of vegetable oil to the skillet. Add ginger and garlic and stir-fry for about 30 seconds until fragrant.
Pour the prepared sauce mixture into the skillet and bring to a simmer.
Return the browned steak to the skillet and toss to coat with the sauce. Cook for another 1-2 minutes until the sauce has thickened slightly.
Stir in the sliced green onions.
Serve immediately over rice.
Notes
For a spicier version, add a pinch of red pepper flakes with the ginger and garlic.
Ensure your wok or skillet is hot before adding the steak for a good sear.
Slice the steak thinly against the grain for tenderness.
