Ingredients

Scale
  • 1 tablespoon coconut oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, grated
  • 1 red Thai chili or 1/2 jalapeƱo, minced (optional for spice)
  • 2 tablespoons red curry paste
  • 1 (13.5 ounce) can full-fat coconut milk
  • 4 cups chicken or vegetable broth
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon lime juice
  • 1 cup mixed vegetables (like sliced carrots, bell peppers, or mushrooms)
  • 1 cup cooked protein (shredded chicken, tofu cubes, or pre-made potstickers/dumplings)
  • Salt to taste
  • Fresh cilantro and green onions for garnish

Instructions

  1. Heat the coconut oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, grated ginger, and chili (if using). Cook for 1 minute until fragrant.
  3. Stir in the red curry paste and cook for 1 minute, stirring constantly to toast the spices.
  4. Pour in the coconut milk and broth. Bring the mixture to a gentle simmer.
  5. Stir in the soy sauce and lime juice. Taste the broth and add salt as needed.
  6. Add your mixed vegetables and cook until they are tender-crisp, about 5 to 7 minutes.
  7. If using pre-cooked protein like shredded chicken or tofu, add it now to heat through. If you are using frozen potstickers or dumplings, add them according to package directions, usually simmering until cooked through.
  8. Serve the soup immediately. Garnish each bowl generously with fresh cilantro and sliced green onions. Turn up the music and celebrate your delicious news!

Notes

  • For a vegetarian or vegan version, use vegetable broth and ensure your dumplings or protein source are plant-based.
  • If you want a richer, tangier flavor similar to Tom Kha Gai, add 1 teaspoon of fish sauce (omit for vegan) along with the soy sauce.
  • This soup is excellent for meal prepping; store leftovers in an airtight container for up to 4 days.
