Bake these soft, buttery snowball cookies coated in a sweet cinnamon sugar mixture. This easy recipe delivers the perfect crumbly, melt-in-your-mouth texture for your holiday baking.

  • 1/2 cup powdered sugar, plus 1 cup for coating
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional, for depth)
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pecans or walnuts (optional, omit for nut-free)
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy. This step helps achieve the melt-in-your-mouth texture.
  3. Beat in the vanilla extract and almond extract, if using.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. If you are using nuts, mix them in now.
  5. Roll the dough into small balls, about 1 inch in diameter. Place them 1 inch apart on the prepared baking sheets.
  6. Bake for 10 to 12 minutes, or until the edges are set but the cookies remain pale. Do not overbake; they should look slightly underdone.
  7. While the cookies cool slightly, prepare the coating. In a shallow dish, combine the remaining 1 cup of powdered sugar, the granulated sugar, and the ground cinnamon. Whisk well to distribute the cinnamon evenly.
  8. Let the cookies cool on the baking sheet for 5 minutes. While they are still warm, roll each cookie ball thoroughly in the cinnamon sugar mixture until completely coated.
  9. Transfer the coated cookies to a wire rack to cool completely. As they cool, the coating will set.

  • For the best melt-in-your-mouth texture, make sure your butter is truly softened, not melted.
  • If you prefer a thicker coating, you can roll the cookies once in plain powdered sugar first, let them set for 5 minutes, and then roll them again in the cinnamon sugar mixture.
