2 cups long-grain white rice, rinsed
2 1/4 cups water or low-sodium chicken broth
1 tablespoon olive oil
1 teaspoon salt
Zest of 2 limes
1/4 cup fresh lime juice (about 2 limes)
1 cup packed fresh cilantro, finely chopped
Instructions
Rinse the rice under cold water until the water runs clear. Drain well.
In a medium saucepan, combine the rinsed rice, water or broth, olive oil, and salt.
Bring the mixture to a boil over medium-high heat.
Once boiling, immediately reduce the heat to the lowest setting, cover the pot tightly, and simmer for 15 minutes without lifting the lid.
Remove the pot from the heat and let it stand, covered, for an additional 10 minutes. Do not remove the lid during this resting period.
Fluff the rice gently with a fork.
Add the lime zest, lime juice, and chopped cilantro to the rice. Gently fold the ingredients into the rice until evenly distributed.
Serve warm or cool for meal prepping burrito bowls.
Notes
For a richer flavor, substitute water with low-sodium chicken broth.
If you prefer a tangier flavor, add the zest of one extra lime.
To make this in an Instant Pot, use a 1:1 rice-to-liquid ratio (2 cups rice to 2 cups liquid) and cook on High Pressure for 4 minutes, followed by a 10-minute natural pressure release.
