Make these irresistibly soft and chewy Christmas Gooey Butter Cookies. They feature a rich cream cheese base, a sweet powdered sugar coating, and festive sprinkles for a melt-in-your-mouth holiday treat.

  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 large egg
  • 1 1/2 cups powdered sugar, plus extra for rolling
  • 1/2 cup festive red and green sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Prepare the cookie base: In a medium bowl, combine the yellow cake mix, melted butter, and 1 large egg. Mix until a stiff dough forms.
  3. In a separate bowl, beat the softened cream cheese until smooth. Add the vanilla extract, almond extract, the second large egg, and 1 1/2 cups of powdered sugar. Beat until the mixture is completely smooth and creamy. This is your gooey topping.
  4. Roll the cookie base dough into small balls, about 1 inch in diameter.
  5. Roll each dough ball thoroughly in extra powdered sugar until fully coated.
  6. Place the coated dough balls onto the prepared baking sheets. Press down slightly with the bottom of a glass to flatten them a bit.
  7. Spoon about 1 teaspoon of the cream cheese topping over the center of each dough ball. Do not spread it to the edges.
  8. If using, gently press a few festive sprinkles onto the topping of each cookie.
  9. Bake for 10 to 12 minutes. The edges will look set, but the center will still look soft and gooey. Do not overbake these cookies.
  10. Let the cookies cool on the baking sheet for 5 minutes before carefully transferring them to a wire rack to cool completely. The center will set slightly as they cool, giving you that perfect melt-in-your-mouth texture.

Notes

  • For an extra festive touch, you can add 1/4 teaspoon of peppermint extract to the cream cheese topping mixture.
  • If you want a slightly crisper edge, bake for an additional minute, but watch closely to keep the center soft.
  • These cookies are excellent for cookie exchanges and can be made ahead of time. Store them in an airtight container at room temperature for up to 4 days.
