12 ounces semi-sweet chocolate chips
8 ounces white chocolate chips
1 tablespoon coconut oil
1 cup fresh strawberries, thinly sliced
1 teaspoon freeze-dried strawberry powder (optional, for dusting)
Instructions
Line a baking sheet with parchment paper. Set aside.
Melt the semi-sweet chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring well after each interval, until smooth.
Pour the melted semi-sweet chocolate onto the prepared baking sheet. Use an offset spatula to spread it into an even layer, about 1/4 inch thick.
Arrange the thinly sliced fresh strawberries evenly over the semi-sweet chocolate layer. Press them down slightly.
In a separate microwave-safe bowl, melt the white chocolate chips with 1/2 teaspoon of coconut oil using the same method as step 2 until smooth.
Gently pour or drizzle the melted white chocolate over the strawberries, covering them completely. Spread lightly if needed.
If using, lightly dust the top with freeze-dried strawberry powder for color.
Place the baking sheet in the refrigerator for at least 1 hour, or until the chocolate is completely firm.
Once set, remove the bark from the refrigerator. Lift the parchment paper and break the bark into irregular pieces.
Notes
Use good quality chocolate for the best flavor.
If you prefer a thinner bark, use a larger baking sheet.
Store the finished bark in an airtight container in the refrigerator for up to one week.
For a faster set time, place the bark in the freezer for 20 minutes after chilling in the refrigerator.
