Creamed Chipped Beef on Toast (S.O.S.)

A quick and comforting recipe for chipped beef in a simple white gravy served over toast, often called S.O.S.

Ingredients

  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup dried chipped beef, chopped
  • 1/4 teaspoon black pepper
  • Pinch of salt, if needed
  • 8 slices white bread, toasted
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to make a roux.
  3. Gradually whisk in the milk until the mixture is smooth.
  4. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  5. Stir in the chopped chipped beef and black pepper. Heat through for 2 minutes. Taste and add salt only if necessary, as the beef is usually salty.
  6. Spoon the creamed chipped beef mixture evenly over the 8 slices of toast.
  7. Garnish with fresh parsley, if using, and serve immediately.

Notes

  • You can use dried or fresh chipped beef for this recipe; adjust salt based on the beef used.
  • For a richer flavor, substitute half of the milk with half-and-half.
  • If you prefer a thinner gravy, add a splash more milk while heating the beef.
