A simple recipe for baking bone-in, skin-on chicken thighs until the skin is crisp and the meat is juicy, covered in a rich garlic parmesan sauce.

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels to help the skin crisp.
  2. Rub the chicken thighs with olive oil, then season evenly with salt, pepper, and paprika. Place them skin-side up in a baking dish.
  3. Bake the chicken thighs for 25 minutes until the skin starts to brown.
  4. While the chicken bakes, prepare the sauce: In a small bowl, whisk together the minced garlic, heavy cream, and chicken broth.
  5. After 25 minutes, remove the dish from the oven. Pour the cream mixture around the chicken thighs, avoiding pouring directly over the skin.
  6. Sprinkle the Parmesan cheese evenly over the sauce mixture.
  7. Return the dish to the oven and bake for another 15 to 20 minutes, or until the internal temperature reaches 165°F (74°C) and the sauce is bubbly.
  8. Remove from the oven, let rest for 5 minutes, and garnish with fresh parsley before serving.

Notes

  • For extra crispy skin, you can briefly place the chicken under the broiler for the last 2-3 minutes, watching closely to prevent burning.
  • If you prefer boneless, skinless thighs, reduce the total cooking time by about 10-15 minutes.
