This Chicken Fajita Casserole is a cheesy, baked delight perfect for family dinners. It brings the vibrant flavors of fajitas into an easy-to-make casserole that everyone will love.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 large bell pepper (any color), sliced
  • 1 large onion, sliced
  • 1 packet (1 oz) fajita seasoning
  • 1 can (10 oz) diced tomatoes and green chilies, undrained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cooked white rice
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • Optional toppings: sour cream, salsa, avocado, cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides.
  3. Add the sliced bell pepper and onion to the skillet with the chicken. Cook until the vegetables are tender-crisp, about 5-7 minutes.
  4. Stir in the fajita seasoning, diced tomatoes and green chilies, black beans, and cooked rice. Mix well to combine.
  5. Pour the mixture into a 9×13 inch baking dish.
  6. Sprinkle the Monterey Jack and Cheddar cheeses evenly over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  8. Let it rest for a few minutes before serving. Add your favorite toppings if desired.

  • You can use leftover cooked chicken or rotisserie chicken to save time.
  • Feel free to add other vegetables like corn or jalapeños.
