1/2 cup diced onion
1 tablespoon minced garlic
4 slices bacon, cooked and crumbled
1/4 cup all-purpose flour
4 cups chicken stock
2 cups cooked chicken (rotisserie chicken works well)
2 cups frozen or fresh corn kernels
2 medium potatoes, peeled and diced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 cup heavy cream
1/2 cup shredded sharp cheddar cheese (optional)
2 green onions, sliced for garnish
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the crumbled bacon. Sprinkle the flour over the onion mixture and cook, stirring constantly, for 1 minute to create a roux.
Gradually whisk in the chicken stock until smooth. Add the diced potatoes, cooked chicken, corn, salt, pepper, and thyme.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 to 20 minutes, or until the potatoes are tender.
Stir in the heavy cream and continue to heat gently until the chowder is warmed through. Do not allow it to boil after adding the cream.
If using, stir in the shredded cheddar cheese until melted and the chowder is creamy.
Taste and adjust seasoning if needed. Ladle the creamy chicken corn chowder into bowls and garnish with sliced green onions.
Notes
For a slow cooker version, combine all ingredients except the heavy cream and cheese in the crockpot. Cook on low for 6-8 hours or high for 3-4 hours. Stir in the cream and cheese during the last 30 minutes of cooking.
If you prefer a thicker soup, mash about 1/2 cup of the potatoes against the side of the pot before adding the cream.
