Ingredients
Scale
1/4 cup chia seeds
1 cup milk (almond milk or dairy milk work well)
1 scoop vanilla protein powder (whey or plant-based)
1 teaspoon vanilla extract
1 tablespoon maple syrup or preferred liquid sweetener (optional)
Instructions
In a jar or container, combine the chia seeds and milk. Stir well for about one minute to prevent clumping.
Add the vanilla protein powder, vanilla extract, and optional sweetener. Whisk or stir vigorously until the protein powder is fully incorporated and the mixture is smooth.
Cover the container and place it in the refrigerator for at least 4 hours, or preferably overnight. This allows the chia seeds to absorb the liquid and thicken.
Before serving, check the consistency. If it is too thick, stir in a splash more milk. If it is too thin, let it sit longer.
Serve cold. Top with fresh berries, nuts, or cinnamon for extra flavor.
Notes
For a chocolate version, substitute the vanilla protein powder with chocolate protein powder and add 1 tablespoon of unsweetened cocoa powder.
To make this a low carb chia pudding, use unsweetened almond milk and a keto-approved sweetener like stevia or monk fruit instead of maple syrup.
If you skip the protein powder, you may need to slightly increase the chia seeds (to 1/3 cup) to achieve a thick pudding texture.
