- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole milk
- 1/2 cup maraschino cherry juice (from the jar)
- 1/2 cup maraschino cherries, drained and chopped
- 1/4 cup maraschino cherries, halved (for topping/mixing)
- 1 batch Cherry Cream Cheese Frosting ingredients (Cream cheese, butter, powdered sugar, cherry juice)
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. Line the bottoms with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the softened butter to the dry ingredients. Beat with an electric mixer on low speed until the mixture resembles coarse sand.
- In a separate bowl, whisk together the eggs, vanilla extract, milk, and maraschino cherry juice until combined.
- Gradually add the wet ingredients to the dry ingredients, mixing on low speed until just combined. Do not overmix.
- Gently fold in the chopped maraschino cherries.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- Prepare the Cherry Cream Cheese Frosting while the cakes cool.
- Once the cakes are completely cool, frost and stack the layers. Place halved cherries on top for decoration.
