  • 2 pounds russet potatoes, peeled and small diced
  • 3 tablespoons oil
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, chopped cilantro

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced potatoes with oil, salt, and pepper on a large baking sheet. Roast for 20 minutes until they start to become tender.
  2. While potatoes roast, cook the ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
  3. Stir the taco seasoning mix and water into the cooked ground beef. Simmer for 5 minutes until the sauce thickens slightly.
  4. Remove the potatoes from the oven. Add the seasoned ground beef mixture to the baking sheet with the potatoes and spread evenly.
  5. Sprinkle the shredded cheddar cheese over the potato and beef mixture.
  6. Return the pan to the oven and bake for another 5 to 10 minutes, or until the cheese is fully melted and bubbly.
