1 pound ground beef
1 small onion, chopped
1 packet (1 ounce) taco seasoning mix
1/2 cup water
4 ounces cream cheese, softened
1/2 cup sour cream
1 cup shredded cheddar or Mexican blend cheese
12 hard taco shells or soft tortillas
Optional toppings: lettuce, diced tomatoes, salsa
Instructions
Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
Stir in the taco seasoning mix and water. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally, until the liquid reduces slightly.
Reduce the heat to low. Add the softened cream cheese and sour cream to the meat mixture. Stir until the cream cheese is fully melted and the mixture is smooth and creamy.
Stir in the shredded cheese until it melts into the filling. Remove the skillet from the heat.
Warm the taco shells or tortillas according to package directions.
Spoon the cheesy, creamy ground beef filling into the taco shells or tortillas.
Add your desired toppings and serve immediately.
Notes
For extra flavor, add 1 teaspoon of chili powder and 1/2 teaspoon of cumin along with the taco seasoning.
If the filling becomes too thick while holding, stir in a tablespoon of milk or water to loosen it slightly.
You can prepare the meat filling up to two days ahead and store it in the refrigerator. Reheat gently before serving.
