Make simple, satisfying quesadillas filled with seasoned ground beef and lots of melted cheese on the stovetop.

  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning mix
  • 1/2 cup water
  • 8 large flour tortillas
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 2 tablespoons vegetable oil

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  2. Stir in the taco seasoning mix and water. Cook according to seasoning packet directions until the liquid reduces, about 5 minutes. This is your beef filling.
  3. Place one tortilla in a clean, dry skillet over medium heat.
  4. Sprinkle half of the tortilla surface with cheese, then top with about 1/4 cup of the beef filling. Sprinkle a little more cheese on top of the beef.
  5. Fold the empty half of the tortilla over the filling to create a half-moon shape.
  6. Cook for 2 to 3 minutes per side until the tortilla is golden brown and the cheese is fully melted. Press down lightly with a spatula while cooking.
  7. Remove from the skillet, slice in half, and repeat with the remaining ingredients.

Notes

  • For extra crispiness, brush the outside of the tortillas lightly with oil or melted butter before cooking.
  • Use a mix of cheeses for better flavor and melt.
  • Serve immediately with salsa or sour cream.
