1 lb ground beef
1 packet (1 oz) taco seasoning mix
1/2 cup water
8 large flour tortillas
2 cups shredded cheddar or Monterey Jack cheese
2 tablespoons vegetable oil
Instructions
Brown the ground beef in a skillet over medium heat. Drain any excess fat.
Stir in the taco seasoning mix and water. Cook according to seasoning packet directions until the liquid reduces, about 5 minutes. This is your beef filling.
Place one tortilla in a clean, dry skillet over medium heat.
Sprinkle half of the tortilla surface with cheese, then top with about 1/4 cup of the beef filling. Sprinkle a little more cheese on top of the beef.
Fold the empty half of the tortilla over the filling to create a half-moon shape.
Cook for 2 to 3 minutes per side until the tortilla is golden brown and the cheese is fully melted. Press down lightly with a spatula while cooking.
Remove from the skillet, slice in half, and repeat with the remaining ingredients.
Notes
For extra crispiness, brush the outside of the tortillas lightly with oil or melted butter before cooking.
