- 1 tablespoon olive oil
- 1.5 pounds ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 0.5 cup milk
- 1 cup shredded sharp cheddar cheese, divided
- 4 medium potatoes, peeled and thinly sliced (about 1/8 inch thick)
- 0.5 cup shredded Monterey Jack cheese
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain off excess fat.
- Add the chopped onion and cook until soft, about 5 minutes. Stir in garlic, salt, pepper, and thyme. Cook for 1 minute more.
- In a bowl, mix the cream of mushroom soup and milk. Stir in half (1/2 cup) of the cheddar cheese until combined.
- Spread half of the sliced potatoes in an even layer in the bottom of the prepared baking dish.
- Spoon the ground beef mixture evenly over the potatoes.
- Layer the remaining potatoes over the beef mixture.
- Pour the soup and milk mixture evenly over the top layer of potatoes.
- Cover the baking dish tightly with aluminum foil.
- Bake for 45 minutes.
- Remove the foil. Sprinkle the remaining 1/2 cup of cheddar cheese and all of the Monterey Jack cheese over the top.
- Return the dish to the oven, uncovered, and bake for another 15 to 20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
- Let the bake rest for 10 minutes before serving.
Notes
- For quicker cooking, you can microwave the potato slices for 3 minutes before layering them in the dish.
- You can substitute cream of chicken soup for cream of mushroom soup if desired.
- Use pre-shredded potatoes for a faster prep time, though fresh potatoes give a better texture.
