2 cups cooked, shredded chicken
1 (10.5 ounce) can condensed cream of chicken soup
1/2 cup sour cream
1/2 cup water or milk
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
8 small flour or corn tortillas, cut into strips or pieces
2 cups shredded Monterey Jack or cheddar cheese
1/2 cup salsa (optional, for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, water or milk, chili powder, cumin, and garlic powder. Mix until well combined.
Fold in half of the cut tortillas and half of the shredded cheese into the chicken mixture.
Spread half of the chicken mixture evenly into the prepared baking dish.
Layer the remaining tortilla pieces over the first layer.
Top with the remaining chicken mixture.
Sprinkle the remaining cheese evenly over the top layer.
Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
If using, spoon salsa over the top before serving.
Notes
You can use rotisserie chicken to save preparation time.
For a spicier flavor, add a chopped jalapeño to the chicken mixture.
If you prefer corn tortillas, lightly warm them first to prevent cracking when cutting.
